Jordan: The King's Highway from Amman to Petra

 9/28/2023 - Jerash, Ajlun, Home-Hosted Dinner


Ancient Jerash, the world's best-preserved and most complete Greco-Roman city, was established as a town in 70 CE. Today, it is a sprawling open-air museum of monumental temples, baths, theaters, and Byzantine Churches.

So much bread, so little time.

We only discovered our lovely local Amman family was famous until after we arrived. Nor did we realize the challenges they faced. Mom was a widow whose saving grace was the grandchildren born to her daughter. Mother, daughter, and son-in-law, a chef, loved to cook. All came together to form The 2 Chefs, starting out with catering to a nearby hospital staff and school staff and students. Soon, they couldn't catch up and hired a man for deliveries.

Maqluba, a Palestinian tradition, means “upside down” in Arabic 
and is a pot of stewed meat, rice, and fried vegetables 
cooked and flipped onto a serving dish to form an impressive tower.
Our tower tumbled, but it was still delicious.
